How do I make these merengues?

Did you take out the yellow part of the egg? When you add cream of tartar to the egg whites, it does something with the protein in it and makes it poof up. You'll need to mix it at a high speed, which is why electric mixers work best...so just mix it as fast as you can and see if that helps. Also, like I said, make sure the yellow part of the egg is out of it. I tried to make mint meringue cookies the other day and they failed because I started to add the other ingredients before trying to make it peak with the cream of tartar and eggs.. so I read up about it and it seems that's the way to do it.. good luck! Hopefully I'll have better luck next time too :)
